| Country Pork Stew |

This dish is a favorite amongst the beach locals here in malpais.
Pork Stew Ingredients: 6 lbs pork (an assortment of pork head, kidney, heart, and liver) 2 bunches cilantro, chopped 1 red bell pepper, diced 5 large garlic cloves Oregano, thyme, and pepper to taste Hot pepper (optional) Directions Place pork in a deep saucepan. Add water until pork is completely covered. Add cilantro, red bell pepper, garlic, and oregano, thyme, pepper to taste. Boil for two hours in high heat until pork is soft. Note: If you are cooking pork kidneys, cut the kidneys in a central transversal cut, place it on a saucepan with water and let it boil for 3 minutes. Then, pour water away and fill it up with new water. Let it boil again for another 3 minutes. Take kidneys out and dice them and add them to the other pork meat. Serve with white long grain rice. |
